Queens Birthday Cake and Wiiiiiiii!!!


Miss Fab said to me yesterday, "Mum its the Queen's Birthday, aren't we going to celebrate...?"

Er, um, alright.
Just a little celebration (are these parties getting out of hand?)

So we called up some special friends, and invited them to join us for afternoon tea and some Wiiiiiii!
Because wahoo - we got a Wiiiiiiiiiii!!!

{Guess what we did all long wet weekend? Ten pin bowling, golf, tennis, boxing...}

We ♥ Wii.

And I made a cake.
Since our friends are dairy free and we are gluten free this cake had the potential to taste disgusting.
And yet, somehow... it did not.

This is a simple adaptation of the classic NZ Edmonds book Marble cake. Really simple and
easily adapted for allergies (unless you're allergic to egg. Cos then it just won't work).

Marble Cake (with Dairy-free and Gluten-free options)

Ingredients:
3 eggs
3/4 cup of sugar
1 cup flour (gluten free: Use Bakels or Healtheries GF baking mix)
1 teaspoon baking powder
50g butter, melted (Dairy free: use olivani or other dairy-free spread)
2 tablespoons boiling water
food colouring (gel colours work best)

Beat the eggs until they are thick. Gradually beat in sugar until mixture is very thick and pale.
Sift flour and baking powder together and fold into the egg mixture.
Fold in butter and boiling water.
Separate mixture into three bowls. Add food colouring to each one.



**Note I used two dark colours; I should have used a brighter colour for more contrast instead of the purple**

After putting the mixture in a lined cake tin (as shown above) bake for 20-25 minutes at 190oC

Once cooled, decorate to your hearts' content with butter cream icing...


Easy Butter Cream icing
100g butter, softened
icing sugar
flavouring

Whip butter with an electric beater until creamy. Gradually add icing sugar until it looks and tastes right (no measuring)

**For dairy-free substitute butter with olivani; add some maple syrup or vanilla extract for a yummy caramel flavour or cocoa powder for chocolatey deliciousness.**



After devouring the lot, work it all off with some energetic Boxing...



...or bowling... or tennis...
The sky's the limit when you've got Wii !!

  6. Yummy cake! My 3 year old would be in dreamland with a cake that had that many colours in it!

    We had a wii, we had so much fun with it, it's especially fun when you have people over for a few wines!!! My husband sold it and we now have an xbox kinetic which is so much fun too. I just remember when sega mastersystems were cool and can't beleive what these new ones can do!
