Chocolate Chip Cookies... Mmmmmm...
Every now and then I get the urge to feel like a "good mother", so I do some baking.
Usually I'll whip up a batch of my familiar banana muffins... or the berry white chocolate variation (so familiar I almost know the recipe off by heart.)
But sometimes... just sometimes, I feel like being adventurous, and I try something new.
The other day I had a hankering after choc chip cookies, the kind my friend Karen bakes from the good old Edmonds book.
I thought I'd give them a go with gluten free flour... and whaddya know? Mmmmmm, perfecto.
Best cookies ever. Gobbled up in a flash. You couldn't even tell they were gluten free, they were that good.
And easy. You know if I bake it has to be easy.
So here's recipe.
Bake them with "real" flour... or gluten free baking mix. It doesn't matter. They'll still be delicious.
Choc Chip Cookies
INGREDIENTS:
125g butter, softened {online measurement converter}
1/4 cup sugar
3 tablespoons sweetened condensed milk
1/2 teaspoon vanilla essence
1 and a 1/2 cups flour (or GF baking mix e.g. Bakels, Healtheries)
1 teaspoon baking powder
1/2 cup chocolate chips or buttons
METHOD:
Cream the butter, sugar, vanilla and condensed milk (use an electric beater or food processor if you have one)
Sift flour and baking powder together then mix into creamed mixture along with choc chips.
Squish small handfuls into balls and place onto lined baking tray. Flatten sligthly with a fork.
Bake at 180°C for 20 minutes or until golden.
Allow to cool before devouring!
{makes 12-14 good sized cookies}

These are the ones I always make... I think it's the condensed milk that makes them so good!!
Mmmm mmmm looks similar to my Mum's recipe (except she calls them Sante biscuits for some reason?) - Guess what I'm probably gonna make this arvo now?! YUM!

my kids love chocolate chip cookies. not a very common cookie here. my son has been looking over my shoulder and humming hmmmmmmm in my ear - so I guess this is what I am baking today. thanks for sharing. and whats best - I have all the ingredients in the house.

Oooh perfect idea! We even have all the ingredients (Eti buys condensed milk to eat straight from the tube!) so you know what I'll be getting up to this afternoon! :) I can imagine ours (hopefully, depending on my baking skills) will last just about as long as yours did :)
I accidently opened a can of caramel condensed milk so decided to use it instead. I left out the choc chips and had lovely caramel cookies. Delish :)
what is the secret behind these? I have made the recipie over and over again but I cannot figure out what I am doing wrong. when I add the flour etc in the end everything is far too dry and does not bind together. I don’t really get what is suppose to bind this recipe together. the only liquid in these cookies come from the vanilla essences and then the sweetened condensed milk with is more gluggy than anything and once creamed with the butter etc becomes quite solid. I had to add some milk in the end to bind it together otherwise would be just dry dust that doesn’t come together at all. then (maybe because of adding a little bit of milk) these cookies burn (after 17minutes in the oven). I can try less time for next time but is there any thing else I am doing wrong? like instead of softened butter should I melt the butter because then that at least would be some extra liquid?

I do usually have to rescue them before the timer goes off, mainly because my oven is very fast (fan back)
I am very haphazard with measurements and tend to be overgenerous with the butter; when I stick exactly to the recipe and measure perfectly they tend to be firmer and dryer, so perhaps just try adding a bit more butter? i also use them with Healtheries GF baking mix instead of standard flour; it's my FAVE recipe. Sorry its not working for you>!?!
